Absinthe originated in the canton of Neuchâtel in Switzerland in the late 18th century. It rose to great popularity as an alcoholic drink in early 20th-century France, particularly among Parisian artists and writers. Absinthe drinkers included Ernest Hemingway, James Joyce, Pablo Picasso, Vincent van Gogh, Oscar Wilde, Marcel Proust, Edgar Allan Poe and Lord Byron.

Pierwsza receptura absyntu została opracowana w XVIII wieku w Val de Travers w obecnym szwajcarskim kantonie Neuchâtel. Początkowo stosowany był jako leczniczy eliksir na wszelkie dolegliwości, zwłaszcza przeciwbólowo.
